Bubba's Jalapeno Meatloaf

Big Bubba is always grillin' on his Holland at the beach. This is one of his favorite summertime dishes.

1 1/4 lbs lean hamburger
1 jalapeno chopped
1/2 med. onion diced
1/2 med green pepper chopped
2 eggs
1/2 pack ritz crackers crushed
Carolina Seasoning
Directions
Mix all of the ingredients and form in a petite loaf pan. Grill 45 minutes and then sprinkle your favorite shredded cheeses on top; grill to melt.
