Tried my first attempt at Chuck Roast on the Wrangler this past weekend. Although the taste was ok, it was tuff as leather. This is the method I tried:
1. Filled drain pan with 1/2 water & 1/2 apple juice
2. Grilled roast until internal temp to 110
3. Double wrapped roast in alum. foil
4. Put back on grill with water in pan until internal temp reached 170.
5. Kept roast in pan and let set off of the grill for 1 hour to absorb juick back into meat.

So what do you think went wrong? Should I have cooked it until a higher internal temp? I kept water in the pan to lower the cooking temp and try to keep moisture in the meat but that didn't work.

I have cooked dozens of different things on the Holland and this was my first real fail.

Been using a holland for 15 years avg 3-4 meals a week. We have found that sometimes you just get a bad piece of meat. Dont think your method of cooking was the problem. Dont get discouraged it will be better next time out..
