Doing first turkey on holland should I butter it or oil before seasoning and cooking?

I rub the turkey down with either butter/margarine or olive oil before seasoning. The seasoning will stick better & the turkey will brown nicer.
The secret for great turkey is to cook to a specific internal temperature & not worry about how long to cook it per pound. I go to 170 degrees in the inner thigh, then rest covered in the kitchen for 15/20 minutes before carving.
If you want drippings for gravy, cook in a roaster pan. If not, just sit it on the cooking surface. Smoke buds add a little more character to the flavor.
