When I smoke on my Holland I will take the would chips and soak them over night I use a small aluminum pan by webber and put the wood chips with some of the water in 2 of them and water in a 3rd one all sitting side by side. Put these in the grill under grate and then start it and let it heat up once I start to see the smoke come out of the stacks I then place the meat in the grill and when it is all said and down we have great smoke flavor.
