Any ideas for beef ribs ?

I'd use the steamer for sure, which should lower the cooking temp to about 275 to 300F.

I wouldn't add any sauce containing sugar to the ribs until the last 15 minutes or so. That'll eliminate the sauce from burning.

Haven't cooked any large beef ribs on the Holland so far so I'm afraid I can't offer a good cooking duration.
