Thought I'd share. Just did a 4 1/4lb eye of round roast during the wild card games. Started with a simple dry rub of Kosher salt, fresh ground pepper, onion and garlic powder while grill heated up. Digital thermo inserted and roast placed on the grill while I cut up some red potato's, coated with a little mayo then covered with a packet of dry wishbone ranch dressing. Put the potatoes on when temp hit 90 degrees. Pulled roast at 119 to rest while potato's finished and corn/gravy completed. Family loved every bit, minimal leftovers. Roast was very tender and juicy but not as pink as we like. Carryover temp continued to 131. I will take it out at 115 next time, hopefully ensuring definite red/pinkness. Unfortunately, minimal leftovers for sandwiches tomorrow. Who would think with a 4.25lb roast. Compliments to the chef (grill). Scott D |
