Kwik Breakfast Kolaches

On a recent visit to West, Texas we stopped for gas. It was about 6:30 am and there was a line forming outside a little building by the gas station with a sign that read "The Little Czech Bakery". We went in an immediately knew why the line was long. This little bakery serves up some of the most incredible Kolaches ever made. Kolaches are a pastry from Central Europe and consist of a sweet bread stuffed with just about anything you can imagine. We offer up with this quick recipe for you to enjoy.

1 8-count tube of Grand's biscuits
1 egg
2 8oz packages cream cheese
1 cup white granulated sugar
1 egg yolk
1 tsp vanilla extract
fresh fruit slices
6 eggs, scrambled
1/2 lb Jimmy Dean Regular sausage, browned
1/2 cup finely shredded cheddar cheese
Lightly dust each biscuit with flour and place on a flour-coated piece of wax paper or biscuit board. Roll out until they are about 6 inches in diameter. Place a scoop of cream cheese on the flattened dough; bring side up and pinch together, forming a closed ball. Brush on egg wash. Place on preheated Holland Pizza Stone (dust pizza stone with yellow corn meal to prevent sticking). Grill for 15 minutes or until golden brown.

Blend together cream cheese, egg yolk, sugar and vanilla. Stir until smooth. Refrigerate before putting mixture on flattened biscuit.

Crack 6 eggs in a bowl; add just a splash of milk and Carolina Seasoning. Whisk until fully mixed. Scramble eggs to desired consistency.
Brown sausage in a skillet, chopping with a wooden spoon; drain excess grease.
Fold eggs into sausage to mix well.
With a large spoon, place egg and sausage mixture on flattened biscuit dough; top with desired amount of shredded cheese. Bring ends of biscuit together, pinching together until you have a closed ball. Grill for 15 minutes.

Flatten Grands biscuit with your hand until about a 1/2 inch thick; Using the bottom of a small glass, press an indentation into the biscuit; top with cream cheese and place a strawberry slice on top. You can also use various fruit jams as toppers. The possibilities are endless. Always brush Kolaches with egg wash before grilling.

The filling choices are endless for this Kwik and easy Kolache recipe. Other suggestions are to use various fruit pie fillings such as blueberry, strawberry, peach, etc. You can also use left over meats mixing with spices and vegetables; Pulled pork Kolaches are awesome. Try grilling some smoked sausage links, cut up into small pieces, add pizza sauce and mozzarella cheese. Let us know some of your recipes.
NOTE: You can of course make your own homemade sweet bread dough and substitute for the Grands. We're still practicing on that!
