Cookin' Kenny Camp's Veggie Gumbo

Holland's own Cookin' Kenny Camp gave us this awesome recipe for Veggie Gumbo. We've listed many ingredients but it leaves you the room to experiment with your favorite spices and veggies.

24-32 oz smoked sausage (we used Conecuh and Eckrich. Use your favorite)
1 zucchini
1 yellow squash
1 ea. red, green, yellow bell peppers
small bag precooked, deveined small shrimp
2 stalks broccoli, chopped
1 small box whole mushrooms
1 small bag baby carrot
(feel free to add other vegetables and spices to your taste)
Directions

We got creative and used an old, cured cast iron Dutch Oven to cook this great recipe. If you don't have one, an oven-safe aluminum pot will do.


Cut up smoked sausage and place in Dutch Oven on preheated grill. Cook for 20 minutes; Add sliced mushrooms and sliced bell peppers and cook for 15-20 more minutes; Chop up carrots to taste and add and cook for another 15 minutes. Finally, add the shrimp, zucchini, chopped broccoli heads, squash and cook for another 15-20 minutes. Each time you add ingredients, stir thoroughly. Some of the vegetables will render down to make a hearty broth.


We added a little Holland Mediterranean Greek Pepper each time we added ingredients.


Serve over brown rice and with red roasted potatoes or serve in a bowl by itself as a stew. Either way, you'll love this!
