Bourbon Turkey

If you love turkey, you've got to try this great recipe from the kitchen of Gina and Bruce! Don't wait for Thanksgiving, grill it now!

1 cup dry red wine
1/2 cup bourbon
1/2 cup dry sherry
1/3 cup soy sauce
3 tbs vegetable oil
2 tbs brown sugar
5 whole stars anise (or 1 tsp of the spice)
1 tbs minced ginger
Black pepper to taste
3/4 cup bourbon
1/3 cup honey
1/3 cup ketchup
1/4 cup brown sugar
Place the turkey in an aluminum baking pan on your preheated Holland Grill. Mix all marinade ingredients and pour over the turkey. If you have a syringe, inject some of the marinade into the thick parts of the turkey. Cover with aluminum foil, sealing the foil to the top of the bake pan. Bake on the Holland Grill 4-5 hours for a medium size turkey or until it's done. Better to overcook than undercook. We also use an oversize aluminum pan and add veggies around the turkey like carrots, potatoes, etc.

After the turkey is cooked (it's done when the internal temperature of the breast reaches 180 F) remove the aluminum foil and baste the turkey with half the glaze. Let bake another five minutes (uncovered) and then baste with the remainder of the glaze. Turn off heat and let the residual heat bake the glaze onto the turkey.
