Why does my Holland Grill cook hotter around the edges?

By design, the Holland Grill uses constant, rolling, convected heat to cook foods much like a convection oven. Because of the rolling heat, the temperature will be hotter the closer you get to the outside edges. Placing foods such as burgers, steaks, pork chops, etc., near the edges will "char" or blacken the meat a little more, but be sure not to get too close.
