OK, I preheat my Holland and it gets to 450°. Open the lid and put down 3 doz chicken wings on racks. I'd expect to take some time to recover heat lost while the lid was open. I'm now 30 mins after closing the lid and the lid thermometer is reading only about 260°. What's up???

You covered the whole cooking grid with wings, no heat can get to the thermometer in the lid.

Always leave about 2" open around the edges so the air can circulate in the grill.

The more food you put on the grill, the more heat energy you are going to absorb. The temp will not return to your pre-heat temp.
