I am cooking a brisket and can't get my temp down to 250. I have the drip pan full. I've tried cracking the lid. Still at 350. Any ideas?


Found that I could actually lower the temp by slightly turning down the on/off valve.(very touchy though). Also brisket turned out great. Props to Jeff G on the recipe.

Instead of playing with the valve, get an over thermometer and place it on the grid, I'd bet that your grate temperature was not 350. Because of the way the air flows in the grill, your dome temp will more than likely be higher. Your food is near the liquid and will be cooler. If the top of your food is getting done faster than the bottom, you can just tent some foil over it.
