My epic is about 2 years old. Don't use it very much cause the temp stays at about 450-475 degrees all the time. I have cleaned everything there is to clean on this grill and still can't get it to cook in the 400-425 range. When I tried to cook a chicken, if I don't keep checking, it will be burnt up in an hour.....

No need to "keep checking it." Just figure out how long it takes to get it done perfectly, then write that time period down.

My Holland cooks much faster than the times listed in the Holland cookbook. I've learned to adjust and now get perfect results every time just by going with the times I've learned to work for me.

By the way, allowing some build up on the drip pan will lower your temperature a bit.
