I just purchased my Holland about 3 months ago and am really just getting going with it. So we just love how delicious the food is. Does anyone have a good recipe for chicken? I'm looking to find something really different...thanks!


i don't have a recipe available to post right now but here is one sugeestion. place your raw chicken in a pot of ice water and add salt (rock salt preferably, but table salt works, too)
it is amazing how much more moisture will be maintained in your chicken dish. surprisingly, there is no salty flavor

Thanks for the tip on salt water. I've heard that but never tried it.


I do mostly large whole roasting hens, 2 at a time on the grill. Big family!
I spray them with butter spray, sprinkle with Brad's Carolina seasoning & put them in the center of the cooking surface. The chickens I buy have pop-ups, so just leave them on until they pop & take them off. It's best if you let them rest in the kitchen for at least 30 minutes before carving.
They come out golden brown, juicy & delicious! My wife doesn't have to do much else for a huge wonderful meal or two for all of us.

We take a whole chicken cut in half, brush with olive oil on all sides, sprinkel with seasoning salt, close the lid on the holland and walk away for an hour. Awesome and so moist.


Try ranch dressing in a baggie with the chicken breasts overnight in the refrigerator.

Chicken legs at Super Wal-Mart are $5.40 for a 10 lb. bag. Cut the thigh from the drumstick. Pull the skin off of the thigh. Brine the thighs in the refrigerator for 4 or 5 hours. They get mushy if you brine them too long.

Rinse and pat dry. Sprinkle on ‘Weber Grill Creations Smokey Mesquite seasoning’. This is simply delicious and very moist. Very healthy without the skin. I have a special recipe for the brine that I can email out.
