I just got this Holland grill and the temperature gets as high as 500 degrees. What do I have to do to get it to the suggested 400 degrees?

I called Holland's 800 number and was told 500 was not too high to cook. They also told me the more I used it the drip pan would get blacker and that would help bring the temp down. I am now cooking around 400 - 450 depending on the outside temperature.

I have a new Epic that I bought a couple of months ago. It also ran at high temps of about 475-500 and would heat up in about 5 mins. I have found that it has gotten a little lower after using it some, but still hangs about 400 most of the time even when using water in the pan. Still cooks wonderfully though. I would like to get it down even more so I can slow cook some boston butts, ribs, briskets, etc. This is the best grill I have ever had !
