I want to cook a whole chicken, how do I get the temp down into the 300-350 range which would be a more appropriate temp than 450?

depending the model you have if you close the valve to your grease bucket and add water to the drip pan that will bring the temp down into the range your looking for but I've cooked many a chicken at the regular temp and using a temp probe cooking the chicken internal temp in the range of 175 to 180 and they come out great

You can do as Dave says, or prop lid slightly open. Myself I have had great success with keeping the lid closed, adjusting my time to cook at what temp my grill is at.
