Mike G.

Does anyone have a good recipe for dry BBQ rub? I love to cook Boston Butts on the grill and I was trying to find a good dry rub for pork.

Here is a good Memphis style rub I use when I cook my Boston Butt. Taka a small amount of apple cider vinegar and rub the butt all over, just needs to be wet.

go to this link on the web and get the memphis rub recipe. I add a little variation and add 1/4 cup of brown sugar to the recipe.

I rub the butt down the night before I cook it and wrap it in tin foil. An hour before you cook it take it out of the refrigerator and let it warm up. Fill your holland grill pan up with 2 beers and water and let it heat up. I begin cooking in about 20 minutes. Cook it for several hours based on size of butt and keep the water and beer or apple juice in the pan about every hour. Begin checking with your thermometer and when it gets to 165 -170. Let the pan get dry and open the cock valve. I begin pouring a little apple juice over the meat every 20 min until the butt gets to 185 - 190 F. The meat will get darker and develops a bark. Take the meat off the grill and wrap it in tin foil and let it rest for about 20 min. I take two large forks and the meat should come all apart. Hope you like it.

Mike,
I recently ordered a bottle of the Holland "Rump Shake" from this site just to try. If you like a slightly spicy rub, you need to try this. Just sprinkle it on liberally & rub in an hour or so before cooking.

It is really good & I find myself sprinkling it on most of the other meats I cook on the grill now, especially chicken & pork.
