We are serving prime rib for our Christmas dinner and would like to use the grill, but are unsure on what to do. Can anyone give me some advice on a 8 lb. prime rib.
Thank you,

Be sure to have prime rib at room temp. Season with your favorite steak seasoning or salt and course ground pepper. Place on grill fat side down, cook for about two hours, turn over, place internal meat thermometer in middle of meat. (I use the kind with a cable and remote read out so you don`t have to open the lid) If the prime rib has the right color
, cover with tin foil and cook to temp, about 145 degrees for med-rare.Should take about three and half hours +or -,let rist about ten minutes, carve and serve

Just put on the grill, season with Greek Season, (i had a 7.25 lb.) cooked to about 144 degrees....

EXCELLENT!
