Here is a recipe I just made for an Appetizer for Mother's Day.

3 Large Tomato's
1 Poblano Pepper (seeded and roasted)
1 jalapeño pepper (seeded and roasted)
1 teaspoon Dried Minced Onion
2 cloves Garlic
½ teaspoon cumin, or more to taste
¾ teaspoon salt
½ teaspoon Chili Powder
½ teaspoon sugar, to taste


Directions:
Roast Peppers on the grill until the skins are browned, place the peppers in a ziploc bag while still hot so the steam loosens the skins. Pull the skins after they cool and mince the peppers.

Quarter and roast Tomato's in a roasting pan at 400 degrees for about 45-60 minutes or until they start to brown. Use 1/3 Cup of Alder Flav-O-Buds to add some smokey flavor(optional). Pull the skins from the tomato's, drain the liquid and put them in a food processor. Add remaining ingredients and pulse until somewhat smooth. Put the salsa in the fridge for a few hours, a couple of hours of chilling will help the flavors to develop. Serve with your favorite corn tortilla chips.
