I picked up some prepackaged corned beef that Sam's Club was unloading (they had a huge pile for a few bucks each) . I've always boiled my corn beef, maybe throwing some beer in too. Now that I have a Holland I'm intirgued to try to cook it using water in the pan.
What do you think?

I did a corned beef brisket with water in the pan. Mine was tough because I probably didn't cook it long enough. Normally corned beef is very salty, the boiling helps to draw some of the salt out. Water has a much higher density than air, so boiling also cooks it much faster. I am sure if you boil it for about 3/4's of the suggested time then grill it with out water(at 400 degrees), you will probably get a good crust and it should still be pretty tender. This is what i have planned for my next one, but I haven't tried it yet.
