I have always simmered pork ribs on the oven prior to finishing them on the Holland but was thinking of removing the top grate and filling the water pan and then simmering the ribs IN the pan and once ready placing the ribs on the grate to finish them either by steaming them or draining the pan and barbecuing them. This reduces cleanup and I think should not harm the pan because of the reduced temperature when it is filled with liquid. I would have to make sure that the drain pipe does not get clogged so grease can still drop through after the pan is drained.
