I have an Apex with the pellet/chip drawer. Decided to try getting some smoke going. Frankly, it seems to work very well. It takes about 10 to 15 minutes to really get a bunch of smoke roiling up through the stacks. (The fire department was out here 3 times this evening!)

Seriously, this thing works pretty well as far as I'm concerned. I did some pork chops and used the apple pellets. For chicken wings I've used the hickory pellets, twice. Both times I got just a hint of smoke flavor which is exactly what I was wanting.

Only problem was the first time I opened the lid to flip the chops and got a face/eye full of smoke. Took me a few minutes to recover.

I continue to be amazed at the versatility of the Holland grill. I should have bought one 20 years ago. It kills me to think of all the great food I've missed in that time period.

Just been a little over one year now since I bought my first, an Apex, what I like most about it is doing a whole turkey, or a chicken on a roastin' Post with some beer in it. I will never do another roast in a conventional oven again. I also love to do egg muffins with bacon, the bacon comes out so good and I can do many strips at a time. Enjoy your Grill!
