Chicken Wings

*This reciped is for about a dozen wings. You can do more but additional cooking time will be required due to the longer lid open time. Where I have stated 15 minutes, you may wish to go 18 to 20 when doing two or three dozen wings.

Coat cooking grid with Pam, etc.

Wash wings and pat dry. Lightly coat with Olive Oil and season liberally with Uncle Yammy’s chicken and rib rub. There is very little if any salt in this seasoning so don’t worry about overseasoning. Let stand for about 20 to 30 minutes or place in refrigerator for a hour or more.

Preheat Holland Grill to 400F to 430F. Get some smoke going - I prefer mesquite and plenty of it.

When grill is preheated, crack lid open and quickly place wings on cooking grid. Shut lid and allow wings to cook for 15 minutes.

Crack lid and quickly flip each wing. Close lid and cook another 15 minutes.

Crack lid far enough to allow basting of each wing (top side) with Sweet Baby Ray’s Honey Barbeque Sauce. Close lid and allow to cook for 5 minutes.

Open lid and remove wings. Brush sauce on back side of wings as you remove them to plate. Let stand on place for 5 minutes before serving.

The skin will be just slightly crispy, sort of like a potato chip. Delicious. Enjoy.
