Cooker

I love my Holland. But not in love with steamer part. Just can't get a real good hot steam going. It is more of a simmer than a hot moist steam.

Here is my plan. Instead of putting liquid in the drip pan, I am going to put an aluminum roasting pan to one side of the cooking grid, then put my groceries on the other side. I am hoping this will get a really good hot steaming moistness going. Anybody trying steaming this way? I know the Holland Cookbook uses this method for steaming lobster tails.
