i recommend closing the valve and adding water and apple
juice 1/2 1/2 and when its 10 degree;s from done drain the liquid out,however during the cooking process you will need to add liquid every 50 minutes or so,,it's a slower process
so alllow enough time ,,,don't forget to baste it the last 30 minutes with brown sugar and apple juice,,happy grilling
