Topic Title: Cooking Time

Having fun with the APEX I purchased. It appears that the temperature is good on the grill but finding that my cooking times are considerably longer then some of the recipies. Also even with juices dripping on the drip pan I don't get much smoking. Anyone have any comments on these issues?

When you say your temperature is "good", what does that mean? Your grill should preheat to 400+, maybe 450+ on the newer models. After you add the food, the temp will go down & it should cook at 350/400 depending on the amount of food in the grill, the outdoor temps, etc. If your grill is reaching these temps, it should cook close to the recommended times. If not, it obviously will take longer.
