Topic Title: seasoning

Just had my apex grill for about 3 weeks so I am still leaning. Grilled 2 steaks last night and I noticed that the tempeture got to 500 before the time or internal tempeture was reached. Is this a problem and can I control the heat some. Also would like suggestions on the best seasoning for cooking.
