Rob,
Take your drip pan out & check your flame deflector, the large plate right above the burner. If the deflector is warped, it can cause uneven heating. The fact that it kind of changed overnight might indicate that this part had some stresses that finally let go from the heat.
Whatever you find out, call Holland so they can help.

THANKS FOR THE INFO...

I just purchased a Heritage, and have noticed uneven heating also. I have the grill leveled. I did what you suggested, StaffordP, and the deflector looked flat, til I put a level on it. Right in the middle is a discolored area, and when I put the level on it, it wobbles. Could this be the problem? It is an uneven pattern of discoloration.

I've noticed that over the last couple years my Tradition does the sam thing.

Try taking the deflector plate out & cleaning it very intensively. the top of it probably has a lot of arbonization - mine scrapes right off * it is a flaky material, about 1/4" thick. Also, the underside of the defelctor can develop a lot of black ash/soot buildup that may cause the uneven heating. Whenever I clean this deflector, it usually gets better for about 4-6 months.
