I'm a long-time Holland fan. I own an older model similar to the Liberty that I've used for nearly 7 years....breakfast lunch and dinner. Here's some fun things to cook on it if you don't already....
Pancakes....just get some of those disposable aluminum cookie sheet pans. Two of them are the same size as the grill cooking surface. Just grease them with oil, butter, bacon fat..pancakes come out great.
Bacon...you can also slow-fry the bacon on the sheets or just lay right on the grill. I sprinkle coarse black pepper on the bacon as its grilling. Best way to make bacon in my humble opinion.
Pizza....I buy pizza dough and stretch it thinly into single-serve size pieces. I grill both sides of the pieces before topping with sauce and cheese and other toppings and then finish grilling it that way. It comes out amazing. You can also cook frozen pizzas on the Holland.
Stromboli or stuffed pizza dough....roll out fresh pizza dough thinly, add a layer of whatever you like..I do pepperoni and mozzarella. Roll them up and place them on the grill. Turn them a few times to brown all sides. You can heat up pizza sauce right in its own can right on the grill. Yum!
Roasted Garlic...cut an entire bulb cluster in half (skin remaining on) exposing all the centers of the cloves. Drizzle with a little butter or oil and season with salt and pepper. Grill the two sides face down until browned and charred and then turn over to finish until the cloves are soft and tender. Serve just like that..picking out the cloves individually. Nice presentation. Same thing can be done with whole onions...try it!
Carrots and celery...no need to cut up the carrots if you don't want to. I just drizzle whole carrots and celery stalks with olive oil, salt, and pepper, and grill them until they are charred a little, and eat them with a fork and steak knife.
Steak fries...just cut potatoes into long wedges and also drizzle with oil salt and pepper. Brown them all sides. They're done when you can stab them easily with a fork.
Meats...my favorites are chicken drumsticks, pork chops, and London Broil. Don't go plain...sprinkle with your favorite seasonings. Montreal Steak seasoning goes great on all meats. A little oil drizzle is good too for the seasoning to stick and flavors combine.
