Topic Title: how do i reduce the cooking temp

I bought a new Holland grill a year ago and still have my old one. I want to turn that into a smoker grill with a cooking temp around 200 degrees. could i plug up half of the gas vent holes? i have tried a full pan of water and it still reaches close to 400 degrees? Has anyone tried this? Thank you for helping me out.

With a full pan of water, the grill shouldn't get above about 300F. Temps of 250 to 275 would be more common in the winter time.

Make sure the pan is full and keep refilling as necessary (with HOT water). You can crack the lid with a couple pieces of wood chunks about an inch to further reduce the temp if that's what you want to do.

fill your pan as instructed the first time with Warm to Hot water, then refill every few minutes as needed with cold water and you should keep closer to that 200 degree temp.
