Topic Title: New Apex too hot

Just bought the Apex and it's my 3rd Holland grill. My other grills were aluminum and cooking surface was a consistent 300 degrees. My new Apex, even after 4 or 5 cooks now, is reaching in excess of 500 degrees. I know that the stainless steel runs hotter but 500+ seems really hot to me. Any advice is appreciated. I have propped the lid open about 3" but it is still really hot. As point of reference, my temperature readings are coming from a digital thermometer that i have placed just above the cooking service, not the reading on the grill lid thermometer. 1. What are other Apex owners experiencing for term-erasure? 2. How do I reduce the heat (if needed) without using the water/steaming feature.

Using the lid thermometer, you should see about 430F in summer and maybe 380 to 400 in winter. In the winter, I add about 2 or 3 minutes to my regular cooking times to even everything out.

If your lid temp is showing the above, I think you're okay.
