I thought this deserved a second post. While I was cooking the brats, I put a pouch with sliced onions on at the same time. I cooked them about 30 minutes, turning about halfway. They were soft and juicy, not burnt at all, and I added no water to the pouch! You couldn't do that on a conventional grill! The onions would be a cinder, along with the rest of the food! This grill is amazing...I can't wait to get it mastered!

I am not an onion guy, but here is what my wife & family love, mostly to put on burgers & such.
Wrap some thin sliced onion rings in foil with a just a little balsamic & olive oil drizzled on them. Cook on the grill wrapped in the foil for 10 minutes or so, then open the foil & dump the onions on the grill surface for just 3 or 4 minutes to brown them.
I don't eat them because they don't like me, but they smell great when cooking & the family loves them.
