Topic Title: Brisket Question

This is going to be my first attempt at a brisket. Can anyone tell me approximately how long a 5.25 lb brisket might take? With water in the pan my grill still goes to about 280 degrees (empty experimenting today). Also should I flip it about 1/2 way through and should I start grilling fat up or down first? Thanks for the help.

I figured it out. I used Jeff G's Beef Brisket instructions as a guideline. I liberally used Holland's Steaks Alive on both sides. I could not get my grill (Holland Wrangler) below 280 without cracking the lid way open so I cracked it open about an inch to maintain 280. I started cooking around 2:30 and took it off of the grill at 7:15. It was delicious. I love my Holland Wrangler.
