is there any way to regulate the temperature in order to smoke your meat?


The only real way to lower the temp on the Holland is to fill the drip pan with water (it holds a gallon) after you've closed off the drain valve. This will keep a low temp around 275 but you can't really smoke. When I want to get a smokey taste, I use Holland's wood chips in the little box that came with the grill. It will give just a light flavor. I found out how to steam on the Holland website under CUSTOMER SUPPORT>Cooking Tips. I put liquid smoke in the water and it was pretty good.
