If you have a bone-in prime rib, do you need to have a drip pan? If no bone, do you just use an aluminum tray with water for the drip pan?

The Hollands are designed to cook only with the drip pan in place. Don't try to cook with it out.

I've done several prime ribs on the Holland. I don't know what you mean when you say "do you need the drip pan." You can fill the drip pan with a gallon of water to slow cook it, but never take the drip pan out. Are you talking about trying to save the juices?


Is your question in regards to saving the drippings for an Au Jus? then by all means use a disposable baking pan. If you are not trying to save the drippings, then no, no pan. leave the original pan at the bottom of the Holland and let the flavor return to the meat.
