Below is a link to something called "Atomic Buffalo Turds" ABT's for short. Basically you stuff jalapeno peppers with whatever you want, cheese meat, etc, and wrap it with bacon. Most recipes that I have read cook at about 250 degrees or so, so you would have to fill the drip pan. I think trying to cook them at 400 would make the bacon cook too fast in relation to the peppers. I personally have not tried them on Holland but it should be possible.

We cook chorizo and add to cream cheese and grated parmesan cheese with creole seasoning to taste. Once well blended, we squeeze into cored peppers, and cover with 1/2 to 1/3 piece of bacon (secured with toothpick). Put on holland grill for about 45 minutes (or cook to desired doneness on the bacon). I have made these 6 times in the last month and am getting tired of the neighbors asking or more.

i use 8oz package cream cheese 1 cup of shredded monterey jack or chedder, melt the cheese together and fill hollow pepper, wrap with bacon, preheat grill
while fixing peppers.grill about 30 to 40 min depending on weather.excellent, good, great, tastie,

i use cream cheese, grated cheddar and real bacon bits. mix together and fill pepper halves. place on foil lined pan and put in grill. the longer you grill them the milder they are. i usually leave them on for about 30 minutes.

Add smoked pork butt (or your favorite Q) for the meat. "smoke" at a low temp with plenty of wood chips.
