I just bought a new Holland Grill how would you break it in

A whole package of thick cut bacon seasons the pan pretty well.

Dont expect perfect food on the first 4-5 attempts. Once the pan is seasoned your temps will be lower and your foods will be consistently PERFECT. Whole chickens are excellent for seasoning the pan.

Just make sure you follow the manufacturers instructions and let the grill burn off any preservatives. Let the grill come up to temperature and let it burn for at least a half hour.
SgtSteve is right, your temps will be somewhat high until your grill gets broken in.
