Anyone ever cooked bone-in ribeye on the grill or using the SearMate? Any suggestions on method and time for medium to medium rare would be appreciated.

Very good idea to sear the out side. Roast in the Holland using a probe thermometer. Medium rare is about 110 degrees. Let the roast rest for 10-15 minutes before you cut into it or serve it. Cant say how long it will take but leave your day open and frequently check the thermometer.

Thanks chef tim. I'm talking about bone-in steaks, not standing rib roast- would 10-12 minutes per side on the grill after searing sound about right?

10-12 minutes should give you a medium, pinkish steak. I like to rub just a bit of olive oil all over the steak then coat with carolina seasoning (holland's) and ground peppercorns. I've got a SearMate too. If I used that, I'd put the steak about 90 seconds on each side (fully heated to high) and then finish maybe 4 minutes each side on the Holland grill. It's worked for me. Thanks Caleb, I'll use the 4 minutes on each side vs my 10-12 minutes on each side- hate to waste a good steak by over cooking!

JM--You're right. When I said 10-12 minutes on the grill that was WITHOUT using the searing thing. 4 minutes or so after searing. Bon apetite.

4 minutes per side with the Searmate on HI may be overdoing it. I would probably sear it 1.5-2 minutes on HI and check it, if its good...flip and do the same. To finish it turn to low and flip it again. I always check my steaks by pressing on them.

If you want to be more accurate, get a Thermapen, in my opinion, the best instant read thermometer on the market. Its the best for thin fast cooking items.

Thanks for the info. Caleb & I were talking about quick sear on SearMate (1.5-2.0 per side on SearMate and then about 4 minutes on each side on the Holland Grill. I would agree that 4 minutes on both sides on SearMate on high would be too much.

Yeah, I saw that after I did my post. I must have misread it...I was scared that people were agreeing with 4 minutes per side...LOL
