Have been smoking cheese on my Patriot grill. Very little charcoal, smoking wood and racks as far apart as possible with the charcoal on one side and the cheese on the other side. I will admit, it doesn't look near as good as the nice neat blocks of smoked cheese on the grocery store shelf, but it is very tasty. No... matter how hard you try, you will get a little melting.
