How do you lower the temp to smoke the meat?

Actually, the holland grill works at only one setting, max and you really do not smoke the item but add smoke flavor to it.

True smoking is like soaking the item in a brine solution for a period of time air dry and then putting into a low heat smoker, I have the "Little Cheif" smoker. So adding smoke flavor is the key here! HTH
