Topic Title: Is 450º too hot?

I just started using The Epic. First initial setup I ended up grilling 10 lb. Ham. My grill reached up to about 450º in about 8-10 minutes. Although I was able to grill the ham for about 2 hours and 20 minutes which turned out great by the way.

But, I'd like to get my temperature down to the 400º-425º range. I've played around with adjusting the air shutter but it didn't really seem to make much of a difference whether I had it real lean to blue flames or blue with orange/yellow tips.

Does anybody else think that 450º is too hot? Or has anybody else have any success turning down the temp?

Cal, Pour a gallon of hot water in the drip pan, with valve closed, and your temperature will drop. I've heard of propping the lid open about an inch but have not tried it. I don't think 450o is too hot.

Cal, when you first use a new grill it will burn a little hotter, but once you get a coating on your drip pan your temperature should level out about 420 degrees, which is perfect. If you want to cook cooler, you can always add water.

You said you adjusted your shutter, your flame should be blue with just a little bit of a orange tip.


Thanks for the quick reply. I got a bit nervous about overcooking the food with such high heat. I did re-adjust the shutter to bring it back to a nice blue flame / orange tip.

I cooked a 10 1/2 lb. ham my first try on the new grill... turned out great. I'll answer another post about the ham.
